Quick Notes: I had the hardest time naming this recipe. It’s something I’ve made for years on Easter. It’s not a cheesecake. It’s not a no bake cheesecake – and though it wants to be a fruit tart, it is not. I can’t find tart shells, and I don’t have the pan to make a tart, so this is the next best thing. What this Fruity No-Bake Cheesecake is, is fucking delicious and springy.

Ingredients

  • 1 graham cracker pie shell, blind baked (bake the crust first using the instructions on the packaging)
  • 2 packages cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • -Suggested assorted fruit
  • strawberries
  • kiwi
  • blueberries
  • raspberries
  • blackberries (the store was out, but they're my favorite on this)

Instructions

  1. Mix together the sugar, cream cheese, and extracts until they are fully combined. 
  2. Fill your blind-baked pie shell. 
  3. Get fuckin artsy. Layer on your fruit in fun creative ways. I do it differently every time. 
  4. Optional - if you aren't going to be eating this relatively soon, I do suggest making a quick easy glaze using some sort of preserves and hot water.  It doesn't need to be anything fancy, but it does keep your fruit from drying out and looking lame. 
  5. Allow to set up in the refrigerator for about 4 hours.
