Comforting Homemade Turkey Soup

Quick Nots: This comforting homemade turkey soup is my mom’s recipe so I owe her all credit. It’s best made after Thanksgiving because you’ll usually have a carcass just laying around that would otherwise be garbage. This is a great way to put that and your leftover turkey to great use. It is, however, good anytime you have a turkey on hand.

Ingredients

  • 1 leftover turkey carcass (you should have cooked the turkey and carved off most of the meat)
  • 5 large carrots, peeled and cut into thick coins
  • 3 large russet potatoes, cut int bite-sized chunks
  • 5 stalks of celery, chopped
  • 1 onion, chopped into chunks
  • 12 oz bag frozen corn
  • 12 oz bag frozen peas
  • 2 bay leaves
  • garlic salt
  • salt and pepper

Instructions

  1. Toss your whole turkey carcass in a large stockpot. Fill it with enough water to cover the whole bird. Add your onion, bay leaves, and salt and pepper, and toss that baby on the stove, medium-hi heat.  Boil covered for 4-5 hours. Check it frequently to make sure the water hasn't dropped more than half.  If it has, add more water.  
  2. Remove the carcass from the broth and allow it to cool enough that you can comfortably handle it.
  3. Strain the broth to remove and random shit that's collected and return the broth to the pot. 
  4. Pick all the meat remnants off of your Turkey.  This is really the only part of this recipe that's a pain in the ass. Try to avoid any unsavory bits like tendons, skin, or little bone chunks and toss the meat into the pot.  Discard the bones when you're done.
  5. Throw in your fresh carrots, potatoes, and celery.  I also add more water, salt and pepper, and garlic salt at this point but it is a little bit of a guessing game. Depending on the size of your bird and how much stock was left after boiling the turkey, you may need to add more or less water.  I usually add at least four cups, but I would start with 2 and taste it.  Add more from there. You should also season it to your liking. Boil together for about 45 minutes.
  6. Allow the soup to cool before serving.
