Quick Notes: This Easy Brunch Casserole is a super simple way to feed a crowd for brunch. It’s based on an old recipe that my mom used to make on Christmas morning, but I made a few improvements, I feel.

Ingredients

  • 1 can of homestyle biscuits
  • 12 pre-cooked sausage links cut into bite-sized pieces (you can cook your own, or buy them this way in the frozen section)
  • 12 eggs, thoroughly beaten
  • 1 cup mild cheddar cheese (kinda measure with your heart tho)
  • 1/4 cup heavy cream
  • salt and pepper

Instructions

  1. Preheat the oven to 425 degrees.
  2. lightly grease a 9 x 13 baking dish.
  3. Plop your biscuits in there one at a time.  There's not really a science to this.  Just get them in there.  They don't really need to touch but try to make it even. 
  4. Whisk the heavy cream into your eggs and season them with salt and pepper-  then dump them over the biscuits.  Sprinkle over your sausage and cheese.
  5. Bake in the preheated oven for 35 - 40 minutes or until the eggs are cooked and the biscuits don't feel doughy when poked.  Some of your eggs may accumulate beneath the biscuits, but that's fine.  they're still super tasty. 
  6. Allow the casserole to cool for ten minutes before serving.
