Ingredients

  • 1 lb jumbo shells, cooked to package specifications
  • 1 lb spicy sausage roll (like jimmy dean ground sausage)
  • 12 oz ricotta
  • 1 cup shredded parmesan (more for topping)
  • 28 oz can crushed tomatoes (give or take)
  • 1 green bell pepper, roughly chopped, seeds removed
  • 2 (or 4 or 6, whatevs) cloves of garlic, minced and divided
  • 1/2 white onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon crushed red pepper flakes

Instructions

  1. In a large sauce-pot heat your olive oil over medium-high heat.
  2. Add your green peppers, onion, 1/2 of your garlic (reserve the other half for stuffing your shells), and red pepper flakes and saute until onions are clear.
  3. Stir in your tomatoes, salt to taste, cover, and reduce heat to medium.  Simmer for about 20 minutes stirring frequently.
  4. Meanwhile, brown your sausage in a frying pan.  Drain off the grease. Set aside.
  5. Preheat your oven to 350 degrees.
  6. In a medium-sized mixing bowl, combine your ricotta and your parmesan.  Stir in your browned sausage along with your reserved garlic. Salt and pepper lightly.
  7. Set out a 9 x 13 baking dish. Stuff your shells liberally one by one with the sausage and cheese mixture. Stuff as many of these bitches in the pan that you can.
  8. Once your sauce seems....like a sauce, taste it.  If it needs more salt, now is the time to add it.
  9. Pour your sauce over your shells. cover the dish with ton foil and bake in your preheated oven for 30 minutes.
  10. remove the dish from the oven and allow it to cool about ten minutes before serving.  Top with parm!'

Make it a meal by starting with some Chicken and Gnocchi Soup and follow it with some Crème Brûlée.
