Sweet Summer Crunch Fruit Salad

Quick Notes: This Sweet Summer Crunch Fruit Salad is admittedly going to be best when the fruits are in season. Too early and the nectarines will be too tough and too late and the berries will be tart. June-Sept is when this baby shines. I recommend preparing this about 2 hours before serving for maximum deliciousness.

Ingredients

  • 5 nectarines
  • 1 carton blackberries
  • 2 cartons blueberries
  • 1 - 1 1/2 cups granola
  • 3 tablespoons honey
  • 1 lime

Instructions

  1. Cut the nectarines into small bite-sized pieces and toss them into a medium-sized bowl.
  2. Toss in your berries.
  3. Zest your lime completely into the salad.
  4. In a small bowl, juice 1/2 of the lime and add the honey to it.  Stir until well combined.
  5. Add the honey/lime mixture to the salad and stir until the whole salad is coated. Refrigerate (two hours is best, but it can be served immediately)
  6. Before serving stir in the granola.  If the granola sits in the salad it gets all gross and soggy, so wait until you're ready to eat to complete this step.
