Quick Notes: This sauce is fucking spicy. If you don’t want a fucking spicy sauce, this is not the recipe for you. You could tone it down a bit, but it’s meant to have some heat, and that’s intentional. The Tomatoes are probably the most important part of this Linguine Arrabbiata so don’t sub them out. Really, any pasta would work and you could add whatever meat makes ya happy as well. It’s a versatile sauce.

Ingredients

  • 1 lb linguine
  • 2 28 oz cans San Marzano tomatoes (these are imported from Italy. They have a very specific flavor. Do not substitute)
  • 4 large regular-ass fresh tomatoes (preferably garden 1if they're in season), chopped
  • 6-8 cloves of garlic, minced
  • 1 white onion, chopped
  • 1 tablespoon crushed red pepper
  • 2 teaspoons paprika
  • 1 teaspoon chipotle pepper powder (I really like this for the smoky flavor it provides, but it doesn't do anything for the authenticity of the dish).
  • 2 tablespoons extra virgin olive oil
  • Salt and Pepper to taste
  • fresh parm and chopped basil for topping.

Instructions

  1. In a large pot over medium heat, warm the olive oil.  Add the garlic, onion, seasonings, and fresh tomatoes.  Sautee over medium heat until onions are clear. 
  2. Stir in your canned tomatoes, set the temperature to low, and cover.  
  3. Cook the sauce for about an hour, stirring frequently. Taste it often and adjust your seasoning needs as appropriate.
  4. Cook your pasta to the package specifications for al dente.  Once finished, move the pasta to the sauce.  You don't need to drain off the water, but don't dump it in there either.  Use tongs or a pasta spoon to move it over bit by bit. 
  5. Promptly plate your pasta and garnish with fresh parmesan and basil.

Notes

A couple of tidbits I found interesting when originally researching this recipe - Arrabbiata means angry in Italian. Arrabbiata is a traditional Italian spicy marinara. Fra Diavolo, based on what the internet tells me, seems to be an American intention of basically the same fucking sauce but it's usually used for seafood. It also means Brother Devil in Italian which is super fun. Anyway, just thought I would share that. Carry on.
