Triple Berry Dessert Nachos

Triple Berry Dessert Nachos

Quick Notes: This is the ultimate shareable dessert with chocolate, cinnamon, sugar, whipped cream and berries. It could definitely be made for one person, but the quantities I’m listing are intended to feed four or more. These Triple Berry Dessert Nachos are super-rich as written, so I suggest going heavy on the fruit to kinda balance it out.

Ingredients

  • 4 taco sized flour tortillas
  • 1 large carton of strawberries, chopped into bite-sized pieces
  • 1 carton of blueberries
  • 1 carton of blackberries
  • 1/3 cup white chocolate chips
  • 1/2 cup plus 1 tablespoon heavy whipping cream
  • 1/2 cup melted butter
  • 1 cup plus 1 tablespoon sugar
  • 1/3 cup brown sugar
  • 2 tablespoons cinnamon
  • Chocolate syrup

Instructions

  1. Preheat your oven to 350 degrees.
  2. Cut your tortillas like little pizzas into eight equal size pieces.
  3. Line a cookie sheet with parchment paper (preferably), or even nonstick tin foil. You'll either need to do this in batches, or you might need to use two separate cookie sheets.
  4. In a jar, or a large measuring cup, or a bowl (whatever, get creative) mix together 1 cup of sugar, brown sugar, and cinnamon completely.
  5. Pour some onto a plate. Don't pour all of it.  We're going to dredge our "chips" through this, but if you put it all on at once it's going to get clumpy and it's just going to become a huge pain in the ass.  Start with a little.
  6. Dip each tortilla piece into the butter, and then dredge it through our cinnamon/sugar mixture. Let all excess melted butter drip from your chip before putting it in the sugar or you're going to end up with a pile of sugar goo.  Trust me, I've done it.  Once you've coated the chip, lay it on the cookie sheet.
  7. Put the chips in the oven and bake them for 15 minutes.
  8. While your chips are baking, add 1/2 heavy whipping cream and 1 tablespoon to a bowl. Use a hand mixer to whip the fuck out of it until it becomes whipped cream. This usually takes maybe 2-3 minutes of mixing.
  9. In a small bowl, add your white chocolate chips and a tablespoon of heavy whipping cream. If you have a double boiler, melt them that way. If not, do it in the microwave at half power 30 seconds at a time.  Stir it. It should drizzle (fo shizzle). If it is still too thick, stir in a little bit more heavy whipping cream until the consistency is that of a syrup.
  10. Your chips should be done at this point. Make sure they've mostly cooled, and then use a large plate to assemble nachos.  I hope you know how to properly assemble nachos.... but just in case you don't - do it in layers.  Do a layer of chips, toppings, white chocolate, berries - then another layer of chips, etc. Drizzle the chocolate syrup over the top, and scoop the whipped cream on like you would sour cream on normal nachos.

Notes

*If you're eating it immediately, I think that subbing out some vanilla ice cream for the whipped cream would be amazing. You just don't want it to melt and get your nachos all soggy, which is why I opted for a whipped topping instead. *Feel free to swap out other fruits, toppings, whatever. Put some nuts on there, or crumbled candy. Go nuts! Just keep in mind that the chips themselves are already very sweet, so be sure to balance that out.
