Quick Notes: Mexican street corn is delicious, and finding ways to incorporate those flavors into more dishes is a culinary thing right now on the internet. Unfortunately, corn isn’t usually good year-round, so resting on the canned version in this Elote Pasta Salad is a good easy way to get that fix and share it with a lot of people.

Ingredients

  • 1 lb Ditalini pasta, cooked by package instructions
  • 1/2 cup mayonesa (not a typo)
  • 3 cups corn (grilled ears if it's in season)
  • 1 block cotija cheese
  • salt and chili powder to taste

Instructions

  1. In a large bowl, mix together almost everything with the exception of a cup of corn, a little cheese and some chili powder for topping. 
  2. Top with remaining ingredients. 
  3. Refrigerate until it's ready to be served, but I think it's best a little on the warm side instead of really cold, so take that into consideration when serving.

Notes

If you prefer, you could buy Mexican Crema and some lime instead of the mayonesa, but it's up to you.
