Quick Notes: Apparently tater tot casserole is a big thing in the midwest? Although the original recipe doesn’t sound appetizing to me, I did realize there is some potential with the idea and I must admit that this Loaded Baked Potater-Tot Casserole is divine. Terribly unhealthy, but absolutely delicious.

Ingredients

  • 30 oz bag of tots
  • 1 can cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese (plus more for topping)
  • 1 lb bacon, cooked and crumbled
  • 1 bunch green onions, chopped

Instructions

  1. Preheat oven to 375.
  2. In a medium-sized mixing bowl, combine condensed soup, sour cream, and shredded cheese.  Stir until combined. 
  3. Lightly grease a 9 x 13 baking pan and pour the tater tots in, distributing evenly.  You can do this from frozen, but I find it works a bit better if you've let them thaw for about 20 minutes first. 
  4. Pour your bowl of wet ingredients over the top of the tots evenly. 
  5. Bake in the oven for 40-50 minutes or until the tots in the middle are cooked and not crappy and weird.
  6. Remove from the oven and give it about 10 minutes to cool before sprinkling bacon, cheese, and green onions over the top.  Serve with a dollop of sour cream!

Serve with a side of Garlic Butter Green Beans or as a side to Instant Pot Spare Ribs!
