Quick Notes: This is fucking BOMB. I use pepper jack, but I think a delicious substitution for that in this JalapeƱo Popper Grilled Cheese. Sharp Cheddar might cut the richness a bit.

Ingredients

  • 8 slices of bread
  • 8 oz cream cheese, softened
  • 2 jalapenos
  • 4 slices pepper jack cheese
  • 1 lb bacon (butcher bacon is the way to go)
  • about a cup of freshly grated parmesan
  • butter

Instructions

  1. Heat up a skillet on your stovetop over medium heat.
  2. Butter one side of each slice of bread.Ā  I've heard of people using mayo instead of butter?Ā  Weird, but do what makes you happy.Ā 
  3. Dice your jalapeno and mix it into your cream cheese.Ā 
  4. Spread a healthy amount of cream cheese onto the unbuttered side of the bread.Ā 
  5. Sprinkle some parmesan directly onto the pan where you're going to place your sandwich.Ā  Place your bread butter side to the pan directly on top of the parmesan.Ā 
  6. Add bacon on top of the cream cheese, and the slice of pepper jack on top of the bacon.Ā  Then add the other piece of bread on top with the buttered side facing up.Ā 
  7. Cook until it is browned on the underside.Ā Ā 
  8. Pick the sandwich up with a spatula, sprinkle more parmesan on the pan, and then flip the sandwich over and cook on the other side until browned and melty.Ā 
  9. Remove and add to plate. Repeat until you've made all four sandwhiches.Ā
