Quick Notes: This easy, at home lamb gyro is a great way to enjoy this restaurant food at home. Admittedly, it’s not quite as good as the one you get from an authentic Greek restaurant, but it was tasty and not terribly difficult. It’s an absolute must to add this Classic Greek Tzatziki Sauce.

Ingredients

  • 1 lb ground lamb
  • 1/12 large red onion
  • 2 sprigs rosemary
  • 1 clove of garlic
  • salt
  • lemon pepper
  • 1 egg
  • For Gyro:
  • Sliced tomatoes
  • Sliced red onions
  • sliced cucumbers (not authentic, but I like it)
  • feta crumbles
  • Tzatziki sauce (http://www.justthefuckingrecipe.net/tzatziki-sauce/)
  • -greek yogurt
  • -fresh dill
  • -garlic
  • -olive oil
  • -cucumber

Instructions

  1. What we're making is essentially is a goddamn meatloaf.  Everyone knows a meatloaf, right?  Preheat the oven to 325. 
  2. Dice your garlic, rosemary, and onion and add it to a food processer.  (if you don't have one, use a blender.  If you don't have a GOOD blender, just chop the ever loving fuck out of it) Process into a mush. 
  3. Add your lamb to the processer and process into a paste, or as close as you can get with whatever method you're using. Then work in the egg, salt, lemon pepper, and rosemary. 
  4. Line a loaf pan, and add the meat to the pan. smoosh it down. 
  5. Bake in the oven for about a half an hour to 45 minutes.  It should be about 145 (safe temp) but pulling it out before that and letting the residual heat bring up the temperature is totally fine. It's also ok if it is a little pink cuz we're gonna cook it some more. Let it sit until it's cool enough to touch. Do not drain off the excess grease.  I've made this mistake and you'll have super dry meat.
  6. Remove the loaf from the pan and slice it into super thin slices.  1/8 of an inch is ideal if you can get it there, but just as thin as you can is fine. 
  7. Add a little of your lamb grease to a frying pan and bring it to temp over medium heat. Grill your lamb slices on both sides a few seconds until they brown up slightly. 
  8. Add the slices to a pita bread with your toppings and Classic Greek Tzatziki Sauce.
