Quick Notes: Sorry this photo looks like it came out of a camera from 1985. I legit don’t know what happened there. This is the second of my Brunch pizzas, and Eggs Benedict Brunch Pizza  is delicious. Feel free to use packaged hollandaise if you don’t want to make it from scratch. That’s totally fine. I also think that some tomato would be a killer addition to this pizza, but I didn’t add any, so make your own choice there.

Ingredients

  • 1 Boboli Pizza Crust (or whatever kind of crust you like. Just be aware that it may need a different cook time/temp then what I’m about to outline below. I highly suggest sticking with the Boboli in this instance because it isn’t dough, so you don’t need to worry about the done-ness of your eggs vs crust)
  • 1 1/2 cup hollandaise sauce, prepared. (eggs, butter, lemon. Here’s my recipe http://justthefuckingrecipe/classic-hollandaise-sauce/)
  • 1/2 cup diced ham
  • 1 cup chopped spinach
  • 4-5 eggs
  • Your choice of shredded cheese

Instructions

  1. Preheat oven to 450.
  2. Put your crust on a cookie sheet. (Not directly on the rack. This recipe requires this pizza to be moved without bending, and we’re cooking it a little longer so you don’t want to murder your crust)
  3. Layer the prepared hollandaise sauce in the middle like you would with any sauce on any pizza ever. It helps if it’s still warm, but it’s not a requirement. If you’ve used the prepackaged kind I highly suggest giving it a little salt.
  4. Sprinkle over with cheese. As I usually suggest to measure this with your heart, you can do so…. but your heart might like to keep in mind the classic flavors of eggs benedict and not go apeshit on the cheese.
  5. Layer on your ham evenly, along with just over half of your spinach. (I know it looks like a lot, but it shrinks when it cooks).
  6. Crack your eggs directly onto the pizza. Try to space them out as best you can. Your eggs are going to try to immediately escape your pizza like the assholes they are. Use the remaining spinach to dam off any wayward egg streams (uh, you’re welcome).
  7. Put your pizza into the preheated oven. Bake for about 15 minutes. Check the pizza. If your egg whites have not set up, switch it over to broil and watch it like a hawk. This will do the trick. You want your yolks to be about over-medium, so don’t overdo it, but make sure your whites are cooked the way they should be with a fried egg.
  8. Remove the pizza from the oven, and sprinkle with fresh cracked pepper (or whatever you’ve got on hand). Let sit for ten minutes before slicing.
