German Pancakes with Buttermilk Syrup

Quick Notes: I think we got this German Pancakes with Buttermilk Syrup recipe from my mother-in-law, but I’m not 100% on that. Pro Tip: do not melt the butter by putting your glass pyrex directly on a burner like an uneducated potato, or it will literally explode like a kitchen bomb. I may or may not have learned this the hard way a few years back.

Ingredients

  • -Pancakes
  • 6 eggs
  • 1 cube butter
  • 1 cup flour
  • 1 cup milk
  • pinch salt
  • 1/2 tsp vanilla extract (if you're making the syrup also, I would skip this.)
  • -Syrup
  • 1 cube butter
  • 1 cup sugar
  • 1/2 cup buttermilk
  • 1 tablespoon light karo syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

Instructions

Pancakes

  1. Preheat oven to 400 degrees.
  2. Add a cube of butter to a 9 x 13 pan. Put it in the oven to melt.
  3. Meanwhile, crack your eggs into a medium-sized mixing bowl and mix with an electric mixer on high for about 60 seconds.
  4. Add remaining ingredients to bowl and mix until well combined.
  5. Once the butter has melted in the oven, dump your egg mixture into the butter in the pan.
  6. Bake for 17-20 minutes.
  7. Cut into 6-8 pieces.

Syrup

  1. In large saucepan, melt a cube of butter over medium heat.
  2. Once butter has melted stir in remaining ingredients except for baking soda. Bring to a slight boil.
  3. This is where shit gets weird. You're going to add the baking soda. If you remember elementary school science fairs, you know what baking soda can do. This is your volcano moment. Less Vesuvius and more effusive, but still sketchy if you don't stay on top of it. Once you dump in your baking soda you're going to whisk the fuck out of this while it foams up quickly. Continue to whisk the fuck out of it until it begins to roll back.
  4. Once the "eruption" is complete, cook another 1-2 minutes, stirring more like a normal person, and remove from heat. It will thicken as it cools.
