Quick Notes: There’s a lot of great ways to make an Authentic Chicken Parm and I have much respect for that process. However, if you’re looking for a super easy weeknight dinner this Easy Air-Fryer Chicken Parmesan is absolutely perfect for you. Cook times may vary depending on the size of your air fryer. Mine is a super small one and I had to do each breast one at a time. If yours is larger, do both.

Ingredients

  • 2 chicken breasts
  • 1 cup Italian Bread crumbs (or 1 cup bread crumbs mixed with Italian seasoning)
  • 2-4 slices fresh mozzarella
  • 1-2 cups of marinara sauce (use your favorite recipe or a jar is fine. Here's a recipe for a great spicy sauce http://www.justthefuckingrecipe.net/linguine-arrabbiata-fra-diavolo/)
  • 2 cups cooked pasta or rice (optional)
  • shredded parmesan for topping
  • salt and pepper

Instructions

  1. Pound your chicken breasts out with a meat mallet or a heavy cutting board (legit what I do, don't judge).  You want it to be about 1/2 inch thick max. Salt and pepper the chicken and let it rest a bit. 
  2. Pour your breadcrumbs onto a plate and dredge your chicken through the crumbs until both sides are completely covered. 
  3. Put your breasts into the air fryer at 350 for seven minutes. After seven minutes, flip the chicken. Usually, you would put the sauce under the cheese, but you can't do that in an air fryer so just top with the cheese. Fry for an additional five minutes. 
  4. If you're serving with pasta or rice, add a little sauce on top of your carb pile.  Serve your chicken atop the carbs and cover with more sauce (since we couldn't put it on during the frying process.) Top with parm and serve!
