Classic Buttered Noodles with Mushrooms and Parmesan

Quick Notes: Look, man. This is super simple. You can make this any way you like, with whatever pasta and whatever veg, but I think this Classic Buttered Noodles with Mushrooms and Parmesan is a perfect quick weeknight dinner and it’s super fucking delicious. It doesn’t reheat well so don’t make ahead or make more than you and your family can eat in a sitting.

Ingredients

  • 16 oz Pappardelle Pasta prepared to package specifications
  • 1 stick of butter
  • 1 cup freshly grated parmesan plus more for topping
  • 2 cloves of garlic, minced
  • 2 cups chopped white button mushrooms
  • 1 teaspoon dried parsley
  • flaky sea salt and freshly ground pepper to taste (table is fine if you don't keep this shit on hand)

Instructions

  1. In a large deep skillet melt your butter over medium heat.  
  2. Once melted, add your shrooms and garlic.  Salt and pepper them.  
  3. Saute these together for about 3-5 minutes, but avoid overdoing it.  You do want your mushrooms to soften but remain mostly firm. 
  4. Toss your pasta in the melty mushroom goodness and add the parmesan and Italian seasoning.  Toss the pasta around with tongs or a pasta spoon until the noodles are fully coated. 

This would be super amazing with a fresh and light Berry Crunch Salad with Poppy Seed Dressing beforehand!
