Quick Notes: You can legit add or take away whatever you like or dislike from this recipe. It’s basically a meatloaf/hamburger. Play around with it and find what you like. I happen to think this Rich Salisbury Steak and Gravy recipe is the perfect mix of flavors.

Ingredients

  • 1 lb ground beef
  • 1/2 white onion, chopped
  • 1 1/2 cup sliced mushrooms
  • 1/2 cup Italian bread crumbs
  • 1 egg
  • 1 tablespoon minced garlic
  • 3 cups beef stock
  • 3 tablespoons flour
  • salt and pepper
  • maaaaybe some butter
  • maaaaaybe some cornstarch

Instructions

  1. In a large bowl, combine beef, breadcrumbs, egg, onions, salt and pepper, and garlic until well combined.  You're going to need to do this with your hands.  I'm sorry, it's really the best way even if it's super gross. 
  2. Flatten into four patties like you're making burgers.  If you're feeling frisky, go for fun shapes.  
  3. In a large deep skillet, bring it to medium heat.  Add your "steaks" to the skillet.  You may have to cook them in batches.  Cover, and cook on both sides, until cooked almost through (about 3 minutes per side). We will add them back later, so if they're a little pink don't stress.
  4. Remove the steaks from the pan and set aside.  
  5. We're going to make a roux.  Depending on the leanness of your beef you might not have enough fat.  If it looks like less than three tablespoons, add some butter to make up for the difference and allow it to melt.  Stir in the flour and mix until combined. 
  6. Slowly whisk your beef stock. Bring it to a simmer.  This sauce should begin to thicken.  Add your mushrooms, cover, and cook for about five minutes.  Stir frequently. 
  7. If your gravy isn't thick enough to your liking, you can mix a little cornstarch with water and mix that in to further thicken it, but don't go too nuts. Add your steaks back to the gravy and cook another 2-3 minutes. 
  8. Remove from the heat and allow it to cook for about five minutes before serving.
