Fresh-Mex Cowboy Caviar

Quick Notes: This is a recipe I got from my friend Kaley. It’s a chip dip intended to be served alongside tortilla chips. It’s what we always ask her to bring to any get-together. It’s a fan favorite and everyone loves it. I’m not sure where this originated. You can find several variations of it on Pinterest, but this is the best one I’ve had and it’s so damn easy.

Ingredients

  • 1 can black beans- rinsed
  • 1 can white beans- rinsed
  • 1 can corn- rinsed
  • 1 red bell pepper diced
  • 2 tomatoes diced
  • 2 avocados diced
  • 1/2 red onion diced
  • 1 bunch cilantro chopped
  • 1 lime, juiced
  • 1/2-1 cup Italian dressing
  • Salt and pepper to taste

Instructions

  1. Put all the shit in a bowl. 
  2. Stir.
  3. Set next to chips.
  4. Fin.
