Ingredients

  • 4 chicken breasts (or two if you buy those freakishly large mutant chicken breasts I always seem to end up. You can half those.)
  • 1 cup honey
  • 2 tsp red pepper flakes
  • 1 tbsp apple cider vinegar
  • 1 block of feta
  • onion powder
  • garlic salt
  • white pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to "Hi Broil"
  2. In a small saucepan, add your honey and pepper flakes. Heat until simmering. Let it simmer for a couple of minutes. Remove it from the heat, and add the apple cider vinegar. Allow this to cool. (Alternatively, you can buy it at the store if you don't want to make it.)
  3. In a skillet on medium-high heat, add two tablespoons of olive oil. 
  4. Season both sides of your chicken with the onion powder, garlic salt, and white pepper. 
  5. Place the chicken in the skillet. Cook on both sides until cooked through. Roughly 4 minutes on each side. 
  6. Break up the feta. The whole block if you're doing 4 breasts. 
  7. Cover each breast in feta and place in the oven. If your skillet is oven safe, you can just do it right in the skillet. If it is not, you can use a baking sheet for this. Check after five minutes. The feta should get slightly browned in a couple of spots, but it won't melt completely. If it looks like it needs longer, that's fine. Just keep an eye on it. Broilers on high can sometimes do whatever-the-fuck they want. 
  8. Remove from the oven and serve with your hot honey drizzled over the top.
