Chocolate Raspberry Zucchini Muffins

Ingredients

  • 2 1/2 c flour (I use self-rising. If not, add 1 1/2 tsp baking soda)
  • 1 cup of sugar
  • 1/4 cup cocoa powder (unsweetened)
  • 3/4 cup soft butter
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla
  • 2 cup shredded zucchini
  • 1 1/2 cup fresh raspberries
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350.
  2. Throw flour, sugar, and cocoa powder into a bowl and mix well.
  3. Add all the rest of the ingredients one at a time.  Make sure one is completely incorporated before adding the next.
  4. Spoon into muffin tin 3/4 full.
  5. Bake for 20 minutes for small muffins and 25-28 for large.
