Piña Colada Rice

Quick Notes: This was literally just my attempt at finding something good to go with my coconut shrimp, and it was fucking delicious. This Piña Colada Rice is a great addition to this somewhat tropical shrimp dish. I suspect it would also go well with Kahlua pork or malibu chicken as well. I did this in my instant pot, but you could definitely do this on the stovetop as well.

Ingredients

  • 3 cups long-grain rice, rinsed
  • 1 15 oz can of coconut milk
  • 1 large can pineapple tidbits
  • 2 tablespoons lime juice
  • salt to taste
  • You could also add mandarin oranges or some red pepper flakes if you want a little heat.

Instructions

  1. Add your three cups of rice to the instant pot, along with 3 cups of rice and all the juice from the pineapple.  Close the lid and manual cook for 6 minutes, allow an 8-minute natural release, and then quick release. 
  2. Stir in the lime juice, coconut milk, and pineapple.  Salt to taste.  Serve warm.
